Jeanette Eckert, Department of Geography and Planning and Urban Affairs Center, University of Toledo spoke on "How Urban Planning Can Strengthen Toledo's Local Food System."
Local food systems are often overlooked by urban planners, as the prevailing belief is that the private market is responsible for delivery of this system. Because of the basic necessity of nutritionally adequate diet, a growing body of research is interested in the struggles, be they geographic, financial, or psychological, of some urban residents to access healthy food.
The presentation was part of the Local Food Systems Conference held at the Toledo Hilton. The conference aimed to bring together both academics and practitioners to share their knowledge, experience, and expertise with regard to developing and maintaining local food systems in old industrial regions.
